This is the part most POS systems cannot do. A walk-in orders at the counter — you build it right there, it fires to the kitchen and the bar the same instant, and you take payment before they step aside. The kitchen was already cooking while the change was being counted.
Nobody has to open a table. The first order opens it. Every round after that lands on the same tab — so when the party that already ate orders another round an hour later, it goes onto the bill they already have, not a second one. No. Relay runs in a normal browser, so the phones and tablets already in the shop will do. For the kitchen, any cheap tablet propped on the pass is enough.
